In his new role as Executive Chef, the renowned Puerto Rican chef aims to transform the dining experience at Trova with an innovative culinary vision.

HUMACAO, PUERTO RICO – Trova, the signature restaurant at Wyndham Palmas Beach & Golf Boutique Resort in Humacao, has announced the appointment of acclaimed Puerto Rican chef Daniel Lugo as its new Executive Chef. Recognized for his culinary expertise and experience in internationally renowned kitchens, Lugo brings a wealth of knowledge to Trova. He will lead the restaurant’s evolution with an innovative gastronomic approach that honors Puerto Rican tradition while elevating it to a global stage.

With a philosophy rooted in local ingredients, creativity, and inspiration from Puerto Rican cuisine, Trova’s new direction under Lugo is presented as a “love letter to Puerto Rico.” This refreshed culinary experience reinterprets native flavors with a contemporary approach and global techniques.

Under Lugo’s leadership, Trova’s new menu invites diners on a journey through the island’s flavors and memories, combining contemporary techniques to highlight each ingredient. Some of the standout dishes include: 

  • Joyuda-Style Octopus – A tribute to Lugo’s childhood on Puerto Rico’s west coast, featuring thinly sliced octopus, olive aioli, avocado, lime, sweet peppers, and cilantro.
  • Mero en Caldo Santo – Inspired by the traditional coconut-based fish soup from Loíza, this dish highlights the island’s Afro-Caribbean heritage with premium local ingredients.
  • Local Root Vegetable Salad – A tribute to Puerto Rico’s rich agricultural landscape, featuring roasted vegetables, cumin, goat cheese, oranges, and pumpkin seeds.

A Chef with Global Vision and Puerto Rican Roots

A native of Mayagüez, Lugo discovered his passion for cooking at an early age, inspired by his grandmother’s homemade recipes. His culinary training led him to excel in prestigious restaurants in Puerto Rico and Miami before joining world-renowned Spanish chef José Andrés, a Michelin-starred and Bib Gourmand awardee in Washington, D.C. For over a decade, Lugo served as Head Chef at iconic establishments such as Jaleo, Zaytinya, and China Chilcano.

His talent and creativity have earned him recognition on the Michelin Guide blog and participation in initiatives like the Stadium Chef Series, benefiting the James Beard Foundation, a U.S.-based nonprofit that promotes culinary excellence.
